Summer Glazed Chicken, mushrooms and onions


Ok, so my first dinner to post on here tonight. Tonight I went ahead and did a glazed grilled chicken with sauteed white mushrooms and red onion, garlic mashed potato and a side salad.

Overall I think it went very well. Pretty easy dinner to make. Took me about 40-45mins including prep.

We all enjoyed it esp my son..He just wants what I make now instead of any type of baby food what so ever. He has been getting pretty much what I make since before he was one. He is always in the kitchen watching me and wants to help. Which is pretty cool. Food has always been a pretty big part of my life while growing up and traveling all over the world.

I hope to put a whole diversity of foods from all over on here. What you like you can make. Please comment as well. If you have any input let me know. If you want to share what you did differently let me know. If you just want to have a browse and get some ideas then go for it!

Ingredients

2 Chicken Breast ( I used 1 and cut it in half)

Jack Daniels Glaze
1 Red Onion
1 Packet of white mushrooms
Pepper
Salt

2-3 Large Potatoes
3-4 Garlic Cloves
1/2 Cup of Milk
2 Tbsp of butter


Prep took me about 15-20mins. First what I did was a I had a boneless skinless chicken breast which I filleted in half. As you can see pictured here. The reason I do this because these days chicken breast is so huge that one will actually feed two. They are still an inch think after the split.

After I split it I got a baking pan (pictured) greased it with some olive oil. I usually use foil but I didn't have any right now. So greased the pan, chicken breast onto the pan. Then glazed the chicken on the side facing up. I used some Jack Daniels glaze but you can use whatever. Then added some pepper and salt. While you are doing this turn the oven on to 180C (about 350F).


While you wait for the oven to warm you can then prep your veg for the topping. What I did was use some white mushrooms and red onion. My preference is to take the stems out and peel the mushrooms before I slice them. With the red onion I cut the end off that isnt where it would be attached to stem (if that makes sense). I then cut in half long ways, peeled and sliced.





By the time you are done with this the oven should be warm enough for the chicken to go in. I kind of cheated tonight because while I was doing this my wife was doing the potatoes for the mash. You can just add this to you prep while you are waiting for the oven to warm. The potatoes by this point were already peeled, chopped and in the pot being brought to the boil.

Ok chicken is in. Timer set to 25 mins. Once there is about 10 mins left, take out and glaze the other side. By this time the potatoes are almost done and you can start sauteing your veg. With about 5 mins left on the chicken I did my veg. I used a deep frying pan for this. Add some olive oil. Brought heat to medium high heat to get the pan and olive oil nice and hot. Added the veg, saute for about 2-3 mins.




Ok veg is done and out comes the chicken. Drained the potatoes, added some milk, butter and garlic (4 cloves crushed) mashed.  I had to hurry and make little side salad while the veg was being sauteed, chicken coming out and potatoes being mashed.

Making it right now - pretty darned good so far though I need a deeper frying pan. I have a cast iron frying pan which is pretty sweet though. Also, the neat thing about the cucumber, mint, lemon, lime drink? You can refill the pitcher a few times and it still has a pretty decent taste. I did have to add sweetener to it though because wife didn't like it without it. Still bugs me that I can pick mint wild here in Oregon but it's $1.99 at the store for a small packet of it.

@Saturdays Warrior. That is great to hear man. I prefer cast iron when sauteing veg and things like that. Cast iron heats really well. Do you have gas or electric? Thats great that you can pick the mint. Wish I could. Used to be able to in NH. The drink is really good for sure. Try not to use to much sweetener its really bad to intake. Use a nice sugar or raw cane sugar. Sweeteners are really bad. :)
