Lentil and Potato Bake

Another great Autumn recipe when you feel like something hearty but less fatting.





Ingredients:

2 tbsp of olive oil
2 onions, chopped
2 cloves of garlic, chopped
1 tbsp of turmeric
2 tsp ground coriander
2 tbsp ground cumin
1 tsp of cayenne pepper
1/4 tsp of ground ginger
3 medium-large carrots chopped
3/4 cup of red lentils 
1 can of chopped tomatoes 
2 and 1/3 cups of veg stock
2 lbs of (1 kilo) of Maris Piper or King Edward potatoes ( if in the US then some more mashing)
1/2 cup of mature cheddar cheese
1/4 cup of butter
1/4 cup of sour cream 

Directions:

Preheat the oven to 200C. Heat the olive oil in a large saucepan, add the onions and gently cook for 10 mins until soften but not coloured. Stir in the garlic, spices and cook for a further minute. 

Add the carrots and red lentils and toss well in the spices and onion. Pour in the chopped tomatoes and stock and mixed together well. Cook, uncovered, over a gentle heat for about 30 minutes until the lentils are cooked and tender, the carrots is very soft and the sauce has thickened. 

Meanwhile, place the potatoes in a large saucepan of water, bring to the boil and cook for 20 mins until the potatoes are soft and can be pierced with a knife. Drain well and return to the pan with the cheese and sour cream. Mash together with a potato masher until creamy. Season

Tip the lentil and carrot mixture into the bottom of a baking dish or shallow round dish, then spoon the potato mash on top, leaving it quite rough with some added cheese so it will leave a nice crispy crust. Bake for 25 mins. 

Serves 8 




Brown Lentil Chilli

Really easy dinner to make and a great healthy substitute to a meaty chilli. 


Ingredients: 

Ok guys so my recipe is

8 Cups of Water or 8 Cups of Organic Veg Broth. I used 4 organic veg broth cubes and 8 cups of water to make my broth.
1 Red Bell Pepper Chopped
1 Medium Yellow Onion Chopped
5 Garlic Cloves Chopped
2 and 1/4 Cups of Organic Brown Lentils
4 Tsp of Organic Chilli Powder
2 Cans of Chopped Tomatoes 
A bit of Chipotle sauce ( This is optional, I used about 2 tsps)
Chopped Cilantro 

Directions:

Bring 3/4 cup broth to a simmer in a large pot over medium-high heat. Add onion, bell pepper and garlic and cook about 8 mins or until the onion and pepper are tender. Stir in chili powder and cook 1 minute stirring constantly. Add lentils, tomatoes and remaining 7 1/4 cups of broth. Bring to a boil. reduce heat to a medium-low and simmer, partially covered. 30 minutes or until lentils are almost tender. Add some Chipotle sauce (optional) Uncover and cook 10 minutes longer. Stir in Cilantro and serve.

Yummy Black Bean Burgers

Here is a great substitute to your normal everyday beef burgers. They are so tasty and filling, you will want more.

Ingredients:

1- 16 oz. can black beans, rinsed and drained
2 cups cooked Quinoa (1 Cup of uncooked Quinoa makes 2 cups)
5 Cloves of Garlic Crushed
2 Tbsp olive
1 shallot, diced
1/2 red bell pepper, diced
1/4 tsp ground cumin
1/2 tsp smoked paprika
1/4 tsp sea salt (for veggies)
1/4 tsp smoked sea salt (for beans)
Cilantro leaves, loosely packed
Optional 1/2-1 cup  panko bread crumbs

Instructions:

Begin by sautéing the bell pepper, cumin, and shallot in 1/2 Tbsp of oil till the veg starts to soften, then add the garlic and sea salt, sauté for a minute or two more, turn off heat and set aside.

Next, in a food processor, add the beans, cooled veggies, paprika, and smoked sea salt. Pulse until just combined.

Then add the quinoa and cilantro, again pulse until combined.

Hand form into palm-sized burger patties.

Let cool for 5 minutes, then coat each side in panko bread crumbs, being sure to push down to adhere the breadcrumbs to the burger.

Pan fry in remaining oil (perhaps a bit more) for 5-7 minutes on each side.

Enjoy like a burger.

Crimini Mushrooms

Decided to make my famous Summer Pasta tonight. Its a light healthy dinner that can be whipped up in about 20 minutes or less. While I was contemplating on what mushrooms to use, I came across Organic Crimini Mushrooms. I'v heard about these mushrooms so I thought I would give them a try. I usually use just white mushrooms which are ok but not the best. White mushrooms to me seem to produce to much water when sauteing and I wanted to see how these would turn out.

After sauteing them with some olive oil, a bit of chopped garlic, salt and pepper they turned out to be the best tasting mushroom in my opinion for pasta or salad. They taste really great.

So here is a bit of info about them. Crimini mushrooms, which are darker than the more common button mushrooms, are especially packed with nutrients. Some research has even suggested that eating niacin-rich foods like crimini mushrooms can help prevent Alzheimer's Disease. Some of the most popular ways to cook crimini mushrooms is to saute, grill or roast them.

 Mushrooms are a delicious way to add vitamins and anti-oxidants to your diet. 



Roasted Asparagus

Easy Roasted Asparagus

Asparagus spears (thick spears are best for roasting) 
1-2 Tbsp olive oil
2 cloves garlic, minced
Salt
Freshly black pepper
Lemon juice

Optional: plum tomatoes.

Directions:

Preheat oven to 400°F. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard.

Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly distributed.

3 Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until lightly browned and tender when pierced with a fork. Drizzle with a little fresh lemon juice before serving.

Refried Beans

Here is my recipe for homemade refried beans. These taste a lot better than store bought plus you know what you are getting/eating. I love to eat refried beans especially now I'm trying to stay vegan. Refried beans for soft taco's or just some dip for some nacho chips is always good to have around. So here is the recipe

Ingredients:


1 Can of Pinto Beans Drained and Rinsed
1 Can of Borlotti Beans Drained and Rinsed
2 Cloves of Garlic, Minced
1 Small Onion, Chopped
2 Tsp of Cumin
1 Tsp of Smoked Paprika
1//2 Tsp of Salt
Pepper.
Some Organic Sunflower oil (or oil of your choice)

You can use more of less of the Cumin or Paprika if you choose..The measurements that I put is just the way I like it.

Directions:

Chop the onion and garlic, put some oil in pan and bring it to warm then add onion and garlic and saute for about 3 mins on medium heat. Then add the beans, cumin, paprika, salt and pepper and saute for a further 5-8 mins. Once done add to a food processor and blend till smooth (add about a tbsp of oil or butter to make it more creamy).

Pay Attention To What Your Kids Are Eating!

As parents it's out duty and our responsibility to know what our kids are eating. Their health is our responsibility. If they have a failing diet it's because we are not taking control. If our kids are sick all the time or are constantly in the hospital then parent's it's time to change what your kids are eating. Kids should have the healthiest immune systems and be healthy themselves because they are still young and fresh and their bodies should not be polluted with toxins and junk at such early ages. If we start feeding our kids with food loaded with hormones, toxins and chemicals then its no wonder they have issues and are constantly sick, for example colds, runny noses, blocked ears, constant skin irritations etc. These are pretty much all contributed from a poor diet. Something to think about. 

This picture not only applies to US schools but can be applied to the UK schooling system as well as households no matter what country.

Chicken Enchiladas with Tomato and Green Chilli Sauce

Chicken Enchiladas that you and your family will love. This one is pretty close to authentic as I can get it.


Ingredients: 
8 tortillas
1 cup of shredded cheese
4 chicken breast cooked and shredded
1 cup of sour cream

Sauce:
1 green chilli
1 tbsp of sunflower oil
1 onion finely, chopped
1 garlic clove, crushed
1 400g/14oz can chopped tomato
2 tbsp of tomato puree (paste)
salt and pepper

Directions:

To make the sauce, cut the chilli in half length ways and remove the core and seeds. Chop the chilli very finely.

Heat the oil in a frying pan and fry the onion and garlic for about 3-4 minutes until soften. Stir in the tomatoes, tomato puree and chilli(es). Simmer, uncovered, for about 12 minutes, stirring frequently.

Pour the sauce into a food processor and blend until smooth. Return to heat and simmer for another 12 mins uncovered. Season to taste.

Preheat oven to 180C/350F/Gas 4. Butter a ovenproof dish or baking tray. Take one tortilla and sprinkle with cheese, add chicken, 1 tbsp of sauce and 1 tbsp of sour cream, roll and set aside. Make the rest, pour the remaining sauce over and sprinkle with the remaining cheese. Bake for 25-30 minutes until the top is golden. Serve with remaining sour cream either poured over or on the side in a dish.

Creamy Chicken Enchiladas

Creamy Chicken Enchiladas is a great dinner to make. Everyone I think these days loves Mexican food with a bit of an American twist to it. Real Mexican food is just amazing and I should probably start making some authentic Mexican food one day but for now this will do. This recipe can be very filling and you don't even have to use chicken. The black beans and brown rice are a great source of protein and really filling. So here is the recipe everyone has been waiting for.

Ingredients: What I used

3-4 Organic Chicken Breast
Organic Brown Rice
Black Beans (Drained and Rinsed),Optional
Jalapenos
1/2 teaspoon of Cumin
1/2 teaspoon of Paprika
8 Soft Tortillas
2 Cans of Organic Cream of Chicken Soup (you can make your own but let's be honest this is supposed to be a quick recipe, it doesn't have to be though.

Toppings:

Homemade Salsa*
Sour Cream
Mature Cheddar Cheese

Directions: For Crock Pot if you choose.

Place chicken in Crock Pot and completely cover with water and cook on high for 4 hours. When done take the chicken out and shred. If you don't want to use a crock pot, don't have one or don't have time, you can bake chicken in the oven for about 20 mins on 350F or just slice and diced and cook it in a frying pan.

To make the rice place about 1 cup of rice in a pot, cover with about 1 inch of water, bring to a boil, stir once and then cover and simmer for 20 mins.

When both the chicken and rice are cooked put 1 and 1/2 cans of cream of chicken soup (saving half a can) in with the chicken as well as the cumin, paprika, some chopped jalapenos, black beans and brown rice and mix on a medium temp. Turn on the oven and heat to 180C (350F)

Place mix in each tortilla and then roll up the tortilla and place in baking tray. With the 1/2 of can of cream of chicken still left pour a bit over each tortilla then shred cheese on top of each tortilla with some more chopped jalapenos if you wish. Place in oven for 20 mins. Once done, serve with salsa and topped with sour cream. Enjoy

Summer Glazed Chicken, mushrooms and onions


Ok, so my first dinner to post on here tonight. Tonight I went ahead and did a glazed grilled chicken with sauteed white mushrooms and red onion, garlic mashed potato and a side salad.

Overall I think it went very well. Pretty easy dinner to make. Took me about 40-45mins including prep.

We all enjoyed it esp my son..He just wants what I make now instead of any type of baby food what so ever. He has been getting pretty much what I make since before he was one. He is always in the kitchen watching me and wants to help. Which is pretty cool. Food has always been a pretty big part of my life while growing up and traveling all over the world.

I hope to put a whole diversity of foods from all over on here. What you like you can make. Please comment as well. If you have any input let me know. If you want to share what you did differently let me know. If you just want to have a browse and get some ideas then go for it!

Ingredients

2 Chicken Breast ( I used 1 and cut it in half)

Jack Daniels Glaze
1 Red Onion
1 Packet of white mushrooms
Pepper
Salt

2-3 Large Potatoes
3-4 Garlic Cloves
1/2 Cup of Milk
2 Tbsp of butter


Prep took me about 15-20mins. First what I did was a I had a boneless skinless chicken breast which I filleted in half. As you can see pictured here. The reason I do this because these days chicken breast is so huge that one will actually feed two. They are still an inch think after the split.

After I split it I got a baking pan (pictured) greased it with some olive oil. I usually use foil but I didn't have any right now. So greased the pan, chicken breast onto the pan. Then glazed the chicken on the side facing up. I used some Jack Daniels glaze but you can use whatever. Then added some pepper and salt. While you are doing this turn the oven on to 180C (about 350F).


While you wait for the oven to warm you can then prep your veg for the topping. What I did was use some white mushrooms and red onion. My preference is to take the stems out and peel the mushrooms before I slice them. With the red onion I cut the end off that isnt where it would be attached to stem (if that makes sense). I then cut in half long ways, peeled and sliced.





By the time you are done with this the oven should be warm enough for the chicken to go in. I kind of cheated tonight because while I was doing this my wife was doing the potatoes for the mash. You can just add this to you prep while you are waiting for the oven to warm. The potatoes by this point were already peeled, chopped and in the pot being brought to the boil.

Ok chicken is in. Timer set to 25 mins. Once there is about 10 mins left, take out and glaze the other side. By this time the potatoes are almost done and you can start sauteing your veg. With about 5 mins left on the chicken I did my veg. I used a deep frying pan for this. Add some olive oil. Brought heat to medium high heat to get the pan and olive oil nice and hot. Added the veg, saute for about 2-3 mins.




Ok veg is done and out comes the chicken. Drained the potatoes, added some milk, butter and garlic (4 cloves crushed) mashed.  I had to hurry and make little side salad while the veg was being sauteed, chicken coming out and potatoes being mashed.

Summer Avocado Salad

Today was another hot day here where I live so I decided to do something light and fresh for dinner. What I came up with was Summer Avocado Salad. Its really light and great tasting. Whats more is you really do not need salad dressing for it because of the flavors mixing together. I know you will really enjoy this on a hot day or just feeling like having something different for dinner or a lunch.


Ingredients:

2 Avocado
1 packet of Cherry Tomatoes
Cilantro (Coriander)
1 Cucumber
1 Small Red Onion
1 Can of Black Beans (Drained and Rinsed)
2 Limes
Half of a jalapeno (if you choose)
Salt
Pepper



Directions:

De-seed and dice the avocado. Peel cucumber and chop into small cubes. Dice the red onion. Dice jalapeno. Once everything is chopped the way you want it, put into a bowl, then add cherry tomatoes. Drain and rinse the black beans, add to salad. Small handful of cilantro (coriander) finely chopped, add to salad. Cut the limes in half and juice over salad. Add pepper and salt to taste.

Serves 4-5

Chicken Soft Taco's

Tonight I was craving some Mexican food so I decided to make Chicken Soft Tacos. I think it had to do with the weather getting warmer, I'm not sure. Tonight instead of using packet taco seasoning I would create my own. This is pretty easy to do if you know the basic Mexican ingredients. There are a lot of different ways to do this of course. I came up with this one and I like it.

If you want to make some taco seasoning and jar it you can because its only spices. If you want to make some fresh stuff to use right now like I did tonight then it will be a mix of spice and veg.

I didn't have any oregano left so I couldn't add that in which is a bummer because its a main ingredient in my opinion esp for Mexican food.

So here is what I came up with.

For dried taco seasoning that you can store use the following.

Ingredients for seasoning:

  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon of dried cilantro or corriander (UK)
  • 1/2 teaspoon paprika
  • 1/2 teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

Direction:

In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container.


For making fresh and using now use the following (which I did tonight)

Ingredients For Seasoning:

  • 1 tablespoon chili powder
  • 4 crushed garlic cloves
  • 1/2 white onion (diced or chopped)
  • Small bunch of cilantro or corriander (UK)
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

2-3 Chicken Breast (cut into small chunks)

Directions:

Same as above except you will be using it with chicken or beef. What I did was use chicken. 2-3 Chicken breast, diced. Warm a deep frying pan with about a tablespoon of sunflower or veg oil. Put in the chicken, cook for about 2-3 mins of medium-high heat. Then add your spice mix and mix. Cook for about another 10 mins on a low heat. You don't want to cook to long on a high heat because you will burn the spice and garlic. 


Serves 3-4



Once done garnish with Diced Tomatoes, Cheese, Sour Cream, Cilantro, Lettuce and my Homemade Salsa (which you can find the recipe for in this blog)

Smooth Spice Curry


Tonight for dinner I made some curry. Really easy recipe that I have come up with. Simple ingredients and easy to make. I love curry and actually could eat it quite a bit. There are so many curry recipes. How you make them and what you can add is endless. Mine is really simple and you will enjoy it.

Ingredients:

2-3 Chicken Breast (can substitute chicken with veg of your choosing. My preferred is Lentils)

1 Can of Coconut Milk (Can use two if you want to make more)

1 Medium Red Onion

4-5 Garlic Cloves

Salt

Pepper

2-3 tbsp Curry Powder (Medium) for one can of Coconut Milk

1 Tomato

Small bunch of Cilantro (Coriander UK)

The Curry Powder I use is Schwartz Curry Powder (Medium). Its a very good one and taste great.

Directions:

Use a wok or a deep frying pay and put in about 1tbsp of veg oil. You want to peel the onion and slice, peel the garlic and crush. Dice the chicken. Turn the pan on medium-high heat. Once warm put in the sliced onion and crushed garlic (for about 2-3 mins you dont want to burn the garlic). Then add the chicken. Sprinkle salt over chicken and some pepper. Once the chicken is semi cooked add the curry powder. Stir, then add the coconut milk, bring to a boil, stir and simmer.





Once the curry sauce is cooking put about 2 cups of rice of your choosing in a pan covered with about a 1inch of water. Bring to a boil then cover and simmer for 20mins.









When the rice is almost done, you want to get your tomato, de-core it and chop your cilantro. Add to curry sauce for the last 2-3 mins. Stir. Rice and curry sauce will be done together.


Serve with fruit or sides of your choosing. I serve with sliced banana, apple and some peanuts.

The Greatest Potato Salad

Ever get a craving for some awesome potato salad and either don't know how to make some or know that store bought isn't great??

I went to a get together this Sunday at my church and I decided to bring my potato salad.
Have you ever been to a get together and just know that your potato salad would be awesome with the rest of the food?? That was my thoughts this time. I knew it would be great to bring..especially since there are always like 4 or 5 other potato salads and they are either store bought with corn and green beans or someones creation of potatoes and mayo. No thought or creativity at all. Why would you want to eat bland potato salad. It would put you off potato salad for a very long time if not the rest of your life and that one awesome side would be missing from great tasting BBQ for ever.

If you guys would like to try a really great recipe then why not try mine the next time you BBQ or whenever you want some potato salad.

Ingredients:

5lbs (2kg) of potatoes, washed, peeled and cut into small cubes. You can cut them as you choose.

1/4 cup White wine vinegar

2 cups of Mayo

3 ribs of celery (about 1 cup finely chopped)

1/2 cup pickle mustard UK, in the US sweet pickle relish

1/3 cup minced red onion

1/4 cup parsley leaves

1 1/2 tsp celery seed

1 tsp powdered mustard

Black pepper

4 Hard boiled eggs, peeled and cut (if you choose)

What you want to do is wash, peel and cut potatoes. Place the potatoes in a large pot cover by inch of water, add a little salt and bring to a boil. Once boiling simmer for about 6-8mins (till you can slip a knife into and out of the center of the potato without resistance).

While the potatoes are simmering. You can boil the eggs (if you are having them) for about 7-8 mins. The potatoes and eggs will be done at the same time. While the potatoes and eggs are cooking place the rest of the ingredients (minus the vinegar) in a boil and mix.

Once the potatoes are done drain them. Place potatoes into a boil and add the 1/4 cup of vinegar. Let the potatoes cool down for about 20 mins. During this time you can peel your eggs and cut them how you want and add them to the mix if you choose. Once the potatoes have cooled mix into potatoes. Then place in the fridge for about an hour before serving.

Grilled Salmon and Salad

Ever get a craving for salmon but you just don't know what to do with it?? Here is a recipe that I think you will enjoy.

Salmon is one of my favorite fish to eat. It needs to be wild of course and not farm raised. Farm raised is actually not good for you. Just like chicken you can buy that is full of hormones and its been kept in cages it whole life. Trust me the things I could post about farm raised fish would put you off probably for the rest of your life. One example is did you know they feed fish fish and they swim in their own crap..I could keep going. So trust me when I say buy wild caught salmon and the price isn't really that much of a difference.

Best place to purchase is Whole Foods or a Farmers Market or really anywhere near you that sells it.

Anyways.....

Tonight I made Grilled Salmon and some salad. It turned out rather nice. I do love salmon every now and then.

Ingredients (I didn't really measure this stuff out haha)

Salmon (I did about 4 fillets)
Powder Mustard
Salt
Pepper
Lemon Juice
Crushed Garlic
Turmeric
Parsley

What I did was mixed and crushed this all up the best I could, rubbed the salmon on all sides. Pre heated the oven to 170C (350F), put in the oven for about 25 mins. Came out perfect and tasted great. Sorry about not having measurements this time around. I usually do but sometimes I just create things and just think how much I might need.




Salad (Pretty Simple)

Lettuce
Baby Leaf Spinach
Carrots
Apple
Sweet Red Pepper
w/Olive Oil and Balsamic Vinegar

Not Just Pancakes


Thinking about breakfast at this time of night and what a better way to start your day than to have some pancakes. I don't know about you but I like my pancakes to be pretty fluffy yet not so thick and heavy feeling. I have tasted many kinds in my time and I can say that this recipe is my favorite so far.



Here is a recipe I whipped up for these awesome pancakes.


Ingredients:

2 cups of flour
1 3/4 cup milk
3 tablespoons baking powder
3 tablespoon melted butter
2 tablespoon of sugar (you can do less if you choose)
1 tsp of vanilla
2 eggs, lightly beaten 
A pinch of salt

In a bowl, mix together the milk, melted butter and eggs. Sift together the flour, baking powder, salt and sugar. Pour the milk mixture into the dry ingredients and mix until smooth. Heat a lightly greased griddle, skillet or frying pan over medium high heat. Pour the batter onto the pan you are using, you can use the 1/4 cup for the batter for each pancake. Brown on both sides. Serve with maple syrup and fresh blueberries, strawberries or bananas.

Owen's Chicken Katsu Curry

Cooking not only is something I really enjoy its a great mind relaxer for me. Its my place of enjoyment that helps me forget everything that is stressful and helps me to revamp myself in a way. Who says cooking needs to be a chore. If you make it interesting and fun it can be really calming and can be something great for the family to do.

Its been a couple of days since I have written on here about much. Tonight I did an awesome meal for my family and I. My son loves it. He has being eaten katsu curry since he was able to eat normal food which has been for awhile now.

So this will bring back so memories of Japan for you guys. I decided to go with a Japanese meal tonight for dinner.

Really simple meal again for those quick and easy meals if you don't have a lot of time. It only took literally 20 mins to make. With about 5-10 mins prep time. If you have children get them involved and not only will it cut the prep time in half but its a great teaching point and a great way to spend time with your family.

I didn't make the sauce myself this time around but I will make it at some point and get back to you. I would like to see how long it actually would take making the sauce myself.

Im sure there are other websites and if you find a better one let me know. I tried Food Network and some others but couldn't find it.

Also if you dont want to use chicken you can substitute with carrots, sweet potato and zucchini or whatever you prefer.

Ok, So here is basically what I did.

First I took a pot of water and put it on high heat to bring it to boil while I was preparing everything else (For the sticky rice)

I then took two fat chicken boneless, skinless chicken breast and fillet in half.


Next I took some bread crumbs put them in a pie dish. Two eggs lightly beaten in a container. Flour on the side.



Sprinkle chicken with flour and season with pepper and salt.


Then once you have done that. Put each slice in the egg batter and then the panko bread crumbs, preparing for cooking. At this point your water for the rice should be boiling and in goes the rice for 20 mins.

Also put oil in your deep frying pan on high heat for the chicken.

Next what you do is take the chicken breast dip them in the egg and then place in the panko bread crumbs covering the chicken.

Chicken Katsu Curry

After you have floured, egg dipped and put into the bread crumbs plus prepared your pan of hot oil your rice should have about 15 mins left on it. This is perfect because what I did was cook the chicken on each side for about 7 mins. So when the chicken was done the rice was too.

Something I forgot to mention was the curry sauce. I had a jar of katsu curry sauce and where there was about 5 mins left for everything I heated that in a pan. This made everything ready at the same time.


So with everything ready at same time this made it a lot better to eat instead of waiting on one or the other to finish. Now I know this isnt such a "healthy" meal but I had a craving and I wanted some Japanese. If you cant afford to go out all the time and get it this is a great replacement. It only cost me about £10, $15 and will feed a family of four.

Chicken Salad


So I should have posted this last night but I forgot to. Here I have a simple chicken and green salad. Its really simple to make and healthy. All it is is some lettuce, spinach (but you cant see it haha), carrots, apples, one boiled egg cut in half and glazed chicken breast topped with olive oil and balsamic. You can add whatever else you would like to it of course and make it your own.

Sometimes in my family we just go a few nights eating salad. It can fill you up and its just a great healthy meal. I think more of this needs to be eaten by people today.

Brown rice and Bean Burrito

Ok so tonight I had a brown rice and bean burrito. Pretty simple to make and pretty filling. Great healthy substitute to beef and bean.

All I did was made some organic brown rice, warmed up some re-fried beans, chopped some lettuce, had some salsa already, grated some cheese and chopped some jalapenos. Next just warmed up a tortilla and put all those ingredients in, wrapped it up and ate. Sorry no picture tonight but it was pretty damn good. You should give it a try for a quick dinner and a filling one. I had two and that was good enough.

Just a dinner I wanted to share with you all tonight. Oh and my son loves it as well..Simple, easy and cheap.

Brown rice stir fry

Awesome tasting healthy dinner for you to try. It will give you great energy and protein for those of you who need it. Great after workouts. Its great for getting the "full satisfied" feeling after you eat instead of leaving you thinking what can I have next. 

So tonight for dinner I made basically a stir fry again. Simple ingredients. I had some left over veg in the fridge that I used. 

Ingredients 

1 Sweet Red Pepper (Chopped)
3 Spring Onions (Chopped)
1 Carrot (Chopped)
2 Chicken Breast
1-2 Cups of Organic Brown Rice
Tamari Sauce

First I diced a sweet pepper, spring onion and a carrot. Then I again filleted a chicken breast which I then cut into small cubes. Once done with that I put a cup of organic brown rice in a pain (First rinse). Put water about an inch above the rice. Bring that to a boil and let simmer for 20 mins. When there is about 5-10 mins left on the rice put about a tbs of oil in a wok/deep frying pan on high heat. Then add the chicken, cook for about 2-3 mins then add the veg, again 2-3 mins. I then added some Tamari sauce instead of Soy sauce. I like the flavor of Tamari better. By the time this is all cooked your rice will be done. Drain the rice. What I did at this point is throw the rice in with the mix, add a bit more Tamari and done. 

Again Simple dinner takes about 30 mins to make.
