Cucumber Tasties

Here is my version of what I call Roasted Cucumber Tasties. Its a great substitute for bread when wanting a bruschetta but don't or cant eat bread. It's great tasting and has tremendous flavor.

Great of serving your guest when wanting a light snack or just for yourself to try. Almost the same as the bruschetta recipe.

Ingredients:

1 Sweet Red Pepper
1 Garlic Bulb
1 Cucumber (Slices Desired)
Olive Oil
Pepper
Salt



Directions:

Pre-Heat oven 375F (185-190C). Take the sweet red pepper and cut off the stem end, de-seed and slice horizontally then slice again. Drizzle with olive oil. Next take the garlic bulb and cut about 1/2 inch of the top. Drizzle garlic with the tbsp of olive oil. Cover the garlic bulb completely with foil. Place both the red pepper slice and garlic bulb onto baking tray. Roast for about 20-25 mins.




Once the timer is down to about 2-3 mins slice your cucumber. Take out the red pepper and garlic. Peel a garlic clove and slice, slice the sweet pepper to length desired and put on cucumber. Put sweet pepper slices on the cucumber slices, then add the garlic slices (amount desired) Drizzle with olive oil, sprinkle salt and pepper on top. Done

Serves 3-4




Roasted Pepper Bruschetta

Here is a simple bruschetta recipe that I came up with. It will be great to do next time you need some party food or just feel like something light to eat. It came out great and the flavors mixed really well. You will have to try to find out :)



Ingredients:

1 loaf of Organic Baguette (6-8 Slices)
1 Sweet Red Pepper
1 Garlic Bulb
1 Tomato (sliced)
1 Tbsp of Olive Oil
Pepper
Salt


Directions:

Pre-Heat oven 375F (185-190C). Take the sweet red pepper and cut off the stem end, de-seed and slice horizontally then slice again. Drizzle with olive oil. Next take the garlic bulb and cut about 1/2 inch of the top. Drizzle garlic with the tbsp of olive oil. Cover the garlic bulb completely with foil. Place both the red pepper slice and garlic bulb onto baking tray. Roast for about 20-25 mins.


Once the timer is down to about 2-3 mins slice your bread and place on oven rack. Everything will then be done together. When done take a slice of tomato and rub the bread (just want the juice) then peel a garlic clove and spread onto a slice of bread (repeat for every slice). Then slice the sweet pepper to length desired and put on bread. Drizzle with olive oil, sprinkle salt and pepper on top. Done

Serves 2-3

Fukushima radiation now detected in U.S. food

Research has shown that bluefin tuna showing up off the coast of California contain radiation. This amount isn't great by any means yet we really don't know how much is to much for consumption. I'm not saying go out and stop buying fresh fish or tuna. Just be careful and keep an eye on this sort of thing. More than likely it will be the fresh fish markets that will be getting checked before they sell.

Craving Something?

Mad Cow and the Problem

Did you know: Mad cow disease came about from farmers forcing cows to eat other cows? Yeah the big things that eat grass are being fed meat which used to include other cows until mad cow disease forced the other cows out of the diet.


"Research indicates that the first probable infections of BSE in cows occurred during the 1970's with two cases of BSE being identified in 1986. BSE possibly originated as a result of feeding cattle meat-and-bone meal that contained BSE-infected products from a spontaneously occurring case of BSE or scrapie-infected sheep products. Scrapie is a prion disease of sheep. There is strong evidence and general agreement that the outbreak was then amplified and spread throughout the United Kingdom cattle industry by feeding rendered, prion-infected, bovine meat-and-bone meal to young calves."

Grilled Chicken and Bacon Sandwich

Ok, so I know this isn't the norm of my blog but I decided to make it anyways. It will add to a selection of already great recipes/foods. This is for someone that is wanting to make a great sandwich for lunch or someone that is looking for something else to eat besides whats on here already.

Don't judge to much as I haven't had bacon in like over 6 months haha. I believe if you eat those types of food sparingly its alright to do. You shouldn't really eat it at all of course but if you do, sparingly is the key.

I made a great tasting sandwich though for you to read about and of course try.

Chicken and Bacon Sandwich...pretty simple




Ingredients:

2 pieces of wholewheat bread
2 or 3 slices of tomato
Applewood smoked cheddar cheese (I used)
Organic or Free Range Chicken breast strips (grilled)
3 Strips of bacon (cooked)
Spicy Mayo or Plain Mayo
Spicy Mustard
Lettuce (not iceburg, its like 90% water) I found out I had no lettuce left haha

Make the way you want and Enjoy :) Its really great. Remember when using a cheese look for a really mature or sharp cheddar. That will give it a great kick/taste.

Summer Glazed Chicken, mushrooms and onions


Ok, so my first dinner to post on here tonight. Tonight I went ahead and did a glazed grilled chicken with sauteed white mushrooms and red onion, garlic mashed potato and a side salad.

Overall I think it went very well. Pretty easy dinner to make. Took me about 40-45mins including prep.

We all enjoyed it esp my son..He just wants what I make now instead of any type of baby food what so ever. He has been getting pretty much what I make since before he was one. He is always in the kitchen watching me and wants to help. Which is pretty cool. Food has always been a pretty big part of my life while growing up and traveling all over the world.

I hope to put a whole diversity of foods from all over on here. What you like you can make. Please comment as well. If you have any input let me know. If you want to share what you did differently let me know. If you just want to have a browse and get some ideas then go for it!

Ingredients

2 Chicken Breast ( I used 1 and cut it in half)

Jack Daniels Glaze
1 Red Onion
1 Packet of white mushrooms
Pepper
Salt

2-3 Large Potatoes
3-4 Garlic Cloves
1/2 Cup of Milk
2 Tbsp of butter


Prep took me about 15-20mins. First what I did was a I had a boneless skinless chicken breast which I filleted in half. As you can see pictured here. The reason I do this because these days chicken breast is so huge that one will actually feed two. They are still an inch think after the split.

After I split it I got a baking pan (pictured) greased it with some olive oil. I usually use foil but I didn't have any right now. So greased the pan, chicken breast onto the pan. Then glazed the chicken on the side facing up. I used some Jack Daniels glaze but you can use whatever. Then added some pepper and salt. While you are doing this turn the oven on to 180C (about 350F).


While you wait for the oven to warm you can then prep your veg for the topping. What I did was use some white mushrooms and red onion. My preference is to take the stems out and peel the mushrooms before I slice them. With the red onion I cut the end off that isnt where it would be attached to stem (if that makes sense). I then cut in half long ways, peeled and sliced.





By the time you are done with this the oven should be warm enough for the chicken to go in. I kind of cheated tonight because while I was doing this my wife was doing the potatoes for the mash. You can just add this to you prep while you are waiting for the oven to warm. The potatoes by this point were already peeled, chopped and in the pot being brought to the boil.

Ok chicken is in. Timer set to 25 mins. Once there is about 10 mins left, take out and glaze the other side. By this time the potatoes are almost done and you can start sauteing your veg. With about 5 mins left on the chicken I did my veg. I used a deep frying pan for this. Add some olive oil. Brought heat to medium high heat to get the pan and olive oil nice and hot. Added the veg, saute for about 2-3 mins.




Ok veg is done and out comes the chicken. Drained the potatoes, added some milk, butter and garlic (4 cloves crushed) mashed.  I had to hurry and make little side salad while the veg was being sauteed, chicken coming out and potatoes being mashed.

Summer Avocado Salad

Today was another hot day here where I live so I decided to do something light and fresh for dinner. What I came up with was Summer Avocado Salad. Its really light and great tasting. Whats more is you really do not need salad dressing for it because of the flavors mixing together. I know you will really enjoy this on a hot day or just feeling like having something different for dinner or a lunch.


Ingredients:

2 Avocado
1 packet of Cherry Tomatoes
Cilantro (Coriander)
1 Cucumber
1 Small Red Onion
1 Can of Black Beans (Drained and Rinsed)
2 Limes
Half of a jalapeno (if you choose)
Salt
Pepper



Directions:

De-seed and dice the avocado. Peel cucumber and chop into small cubes. Dice the red onion. Dice jalapeno. Once everything is chopped the way you want it, put into a bowl, then add cherry tomatoes. Drain and rinse the black beans, add to salad. Small handful of cilantro (coriander) finely chopped, add to salad. Cut the limes in half and juice over salad. Add pepper and salt to taste.

Serves 4-5

Keeping our bodies clean

Here is my thought of the day. I will probably expand on it later.

Would you let the engine of your car run 50,000 to 100,000 miles without ever doing an oil change or service? Then why should you treat your body any different. Think about your body as you would the engine of your car. You need to keep it clean and well lubricated for it to function properly. So why don't we do that?? Keeping our bodies clean and eating the right foods will let our bodies function properly and extremely well for a very long time. You need to put into your body the right food (just as would oil in a car) to help that process. You will feel better about yourself, have more energy and be able to function like you should have all along. It will save you money as well down the road because then you won't have to fix something due to never doing the service you should have to begin with.

THINK ABOUT IT.

Cancer Causing foods

Have you had cancer? Have you known someone that has? I married someone that had it and beat it. One of the things I have come across when reading about cancer is diet. What was the diet of people that have had or have cancer. How much of did they eat. Diet is a very important factor in ones life. I'm not talking about going on a diet but rather what are you or we consuming that could effect us. Think about how much stuff (chemicals) go into our food. The companies aren't bothered about what they put in our food to keep it fresh or great tasting. They just care about the sale. Its up to us to figure it out and be smart about it. The Corporations just want us buying and buying because all they care about is making money. They don't care if we are dying, have cancer or some other illness because guess what....they get even more money when one of these things happens. The insurance companies own the pharmacies and drug companies who in turn own food companies etc. Its just one cycle for them.

Its worth to have think about what your are consuming to much of. Think about could this effect me long term. Do I want to be around longer. What do I need to do to change things. Well one you can do is always come back to my blog and check out the latest haha. Really though think about what you or you and your family are eating way to much of and think is it time to cut back.

One last thing. Meat..Are you eating to much meat?? Where does it come from? Is it just hormone induced meat that's cheap and is loaded with crap?? Meat is another thing that is really bad for us in most cases. I'm mainly talking about red meat. I think these days people are eating way to much of it. In my opinion its ok to eat it every now and then but make sure its from a great source i.e Whole Foods, Farmers Market a Butchers some place other than the cheap isle at Walmart or something similar. Meat also has a link to cancer and that is one thing the Dr will tell you to stop eating so much of and diet change. If the Dr knows whats the link and cause then that should tell you something..They know but do they want you to know before you go into his office for something. Time to do your research...

Price of food/Price of junk

Here is a list of what you could buy for the price of some junk you might want instead. Now this list isn't one of my favorites because even some of the other items I wouldn't buy. Its just to give you an idea of how much some item cost and what you could buy instead. Think about what you are buying next time you go shopping and ask yourself could I buy a few more items, make it myself and make it better. Is it time to change your shopping list and/or eating habits??

Herb of the Week/BF&C

Its been a few days since I have posted anything. Been pretty busy the last couple of days. Don't worry I haven't forgotten about you all.

Here is the herb of the week. Its called BF&C. This herb is a really great one. I can relate because I used this on my knee while serving in the military. Almost the number one problem with ex military and military is of course bad knee's.

I haven't had a problem with my knee every since.

Chicken Soft Taco's

Tonight I was craving some Mexican food so I decided to make Chicken Soft Tacos. I think it had to do with the weather getting warmer, I'm not sure. Tonight instead of using packet taco seasoning I would create my own. This is pretty easy to do if you know the basic Mexican ingredients. There are a lot of different ways to do this of course. I came up with this one and I like it.

If you want to make some taco seasoning and jar it you can because its only spices. If you want to make some fresh stuff to use right now like I did tonight then it will be a mix of spice and veg.

I didn't have any oregano left so I couldn't add that in which is a bummer because its a main ingredient in my opinion esp for Mexican food.

So here is what I came up with.

For dried taco seasoning that you can store use the following.

Ingredients for seasoning:

  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon of dried cilantro or corriander (UK)
  • 1/2 teaspoon paprika
  • 1/2 teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

Direction:

In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container.


For making fresh and using now use the following (which I did tonight)

Ingredients For Seasoning:

  • 1 tablespoon chili powder
  • 4 crushed garlic cloves
  • 1/2 white onion (diced or chopped)
  • Small bunch of cilantro or corriander (UK)
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

2-3 Chicken Breast (cut into small chunks)

Directions:

Same as above except you will be using it with chicken or beef. What I did was use chicken. 2-3 Chicken breast, diced. Warm a deep frying pan with about a tablespoon of sunflower or veg oil. Put in the chicken, cook for about 2-3 mins of medium-high heat. Then add your spice mix and mix. Cook for about another 10 mins on a low heat. You don't want to cook to long on a high heat because you will burn the spice and garlic. 


Serves 3-4



Once done garnish with Diced Tomatoes, Cheese, Sour Cream, Cilantro, Lettuce and my Homemade Salsa (which you can find the recipe for in this blog)

Smooth Spice Curry


Tonight for dinner I made some curry. Really easy recipe that I have come up with. Simple ingredients and easy to make. I love curry and actually could eat it quite a bit. There are so many curry recipes. How you make them and what you can add is endless. Mine is really simple and you will enjoy it.

Ingredients:

2-3 Chicken Breast (can substitute chicken with veg of your choosing. My preferred is Lentils)

1 Can of Coconut Milk (Can use two if you want to make more)

1 Medium Red Onion

4-5 Garlic Cloves

Salt

Pepper

2-3 tbsp Curry Powder (Medium) for one can of Coconut Milk

1 Tomato

Small bunch of Cilantro (Coriander UK)

The Curry Powder I use is Schwartz Curry Powder (Medium). Its a very good one and taste great.

Directions:

Use a wok or a deep frying pay and put in about 1tbsp of veg oil. You want to peel the onion and slice, peel the garlic and crush. Dice the chicken. Turn the pan on medium-high heat. Once warm put in the sliced onion and crushed garlic (for about 2-3 mins you dont want to burn the garlic). Then add the chicken. Sprinkle salt over chicken and some pepper. Once the chicken is semi cooked add the curry powder. Stir, then add the coconut milk, bring to a boil, stir and simmer.





Once the curry sauce is cooking put about 2 cups of rice of your choosing in a pan covered with about a 1inch of water. Bring to a boil then cover and simmer for 20mins.









When the rice is almost done, you want to get your tomato, de-core it and chop your cilantro. Add to curry sauce for the last 2-3 mins. Stir. Rice and curry sauce will be done together.


Serve with fruit or sides of your choosing. I serve with sliced banana, apple and some peanuts.

The Greatest Potato Salad

Ever get a craving for some awesome potato salad and either don't know how to make some or know that store bought isn't great??

I went to a get together this Sunday at my church and I decided to bring my potato salad.
Have you ever been to a get together and just know that your potato salad would be awesome with the rest of the food?? That was my thoughts this time. I knew it would be great to bring..especially since there are always like 4 or 5 other potato salads and they are either store bought with corn and green beans or someones creation of potatoes and mayo. No thought or creativity at all. Why would you want to eat bland potato salad. It would put you off potato salad for a very long time if not the rest of your life and that one awesome side would be missing from great tasting BBQ for ever.

If you guys would like to try a really great recipe then why not try mine the next time you BBQ or whenever you want some potato salad.

Ingredients:

5lbs (2kg) of potatoes, washed, peeled and cut into small cubes. You can cut them as you choose.

1/4 cup White wine vinegar

2 cups of Mayo

3 ribs of celery (about 1 cup finely chopped)

1/2 cup pickle mustard UK, in the US sweet pickle relish

1/3 cup minced red onion

1/4 cup parsley leaves

1 1/2 tsp celery seed

1 tsp powdered mustard

Black pepper

4 Hard boiled eggs, peeled and cut (if you choose)

What you want to do is wash, peel and cut potatoes. Place the potatoes in a large pot cover by inch of water, add a little salt and bring to a boil. Once boiling simmer for about 6-8mins (till you can slip a knife into and out of the center of the potato without resistance).

While the potatoes are simmering. You can boil the eggs (if you are having them) for about 7-8 mins. The potatoes and eggs will be done at the same time. While the potatoes and eggs are cooking place the rest of the ingredients (minus the vinegar) in a boil and mix.

Once the potatoes are done drain them. Place potatoes into a boil and add the 1/4 cup of vinegar. Let the potatoes cool down for about 20 mins. During this time you can peel your eggs and cut them how you want and add them to the mix if you choose. Once the potatoes have cooled mix into potatoes. Then place in the fridge for about an hour before serving.

Health Tip/Fat Buring

So do you want to start losing weight but might be a bit lazy to start exercising at the moment. Then get started by changing what you eat first.

We have all been there when the motivation isn't there to move because of one reason or another. That doesn't mean to just let it all go entirely and eat whatever you want as well. Health Tip

How much crap are you putting into your body? Is it time for a change? Its time to take charge of yourself and make it a goal just like you would with any other goal you want to accomplish.
Why is it that people can reach their goals in going to the university they have always wanted to go to or that dream job they always wanted but a "eating right" goal is just to hard to accomplish??

Grilled Salmon and Salad

Ever get a craving for salmon but you just don't know what to do with it?? Here is a recipe that I think you will enjoy.

Salmon is one of my favorite fish to eat. It needs to be wild of course and not farm raised. Farm raised is actually not good for you. Just like chicken you can buy that is full of hormones and its been kept in cages it whole life. Trust me the things I could post about farm raised fish would put you off probably for the rest of your life. One example is did you know they feed fish fish and they swim in their own crap..I could keep going. So trust me when I say buy wild caught salmon and the price isn't really that much of a difference.

Best place to purchase is Whole Foods or a Farmers Market or really anywhere near you that sells it.

Anyways.....

Tonight I made Grilled Salmon and some salad. It turned out rather nice. I do love salmon every now and then.

Ingredients (I didn't really measure this stuff out haha)

Salmon (I did about 4 fillets)
Powder Mustard
Salt
Pepper
Lemon Juice
Crushed Garlic
Turmeric
Parsley

What I did was mixed and crushed this all up the best I could, rubbed the salmon on all sides. Pre heated the oven to 170C (350F), put in the oven for about 25 mins. Came out perfect and tasted great. Sorry about not having measurements this time around. I usually do but sometimes I just create things and just think how much I might need.




Salad (Pretty Simple)

Lettuce
Baby Leaf Spinach
Carrots
Apple
Sweet Red Pepper
w/Olive Oil and Balsamic Vinegar
