Eggs on Toast

Want a really simple breakfast, then try my eggs on toast.

Really simple to do.

Ingredients

2 Eggs
2 Pieces of Sourdough bread Toasted
1 Tomato
Salt
Pepper

Directions

Turn on oven and heat to about 350F (175C) slice your tomato, drizzle with olive oil, sprinkle with salt and pepper and put into oven for about 10mins

Once there is about 5mins left on the tomatoes

Heat pan on medium-medium high heat adding some butter. Make sure the butter is melted but not burning. Crack open your eggs and into the pan they go. Put your bread in the toaster. What I did was I kept the eggs just on the one side for about 2-3 mins. No flipping necessary. Sprinkle with salt and pepper to taste. Once eggs are done, toast will be done. Butter toast, place eggs on toast and done..Enjoy :)

It is so easy to make. I was contemplating whether or not to post it because of that. Most people know how to make them already..but what the hell right lol..enjoy

I now before I go shopping read your blog for ideas for cooking. I'm slimming down too - the cooking is a great way to relax and destress but it's GREAT! Eating healthy and your blog has given me a new lease on life because the cooking gave me a way to desperately have a hobby that's productive but doesn't detract from family life but improves it and gives me "guy time" to "create." Thanks! Good stuff!

I've got lots of parsley - a bit goes a long ways - topped with parsley - heated sourdough in oven with butter and garlic sauce - then topped with eggs and parsley and a bit of paprika.....
